Penne Pasta With Artichokes And Sun Dried Tomatoes
- 1/2 lb. semolina penne pasta
- 1 1/2 tsp. salt
- 1/8 c. olive oil
- 3 large cloves garlic, chopped
- 1/4 lb. sun dried tomatoes in oil
- 1/2 c. mushrooms, cut in quarters
- 2 tsp. chopped fresh parsley
- 1 tsp. chopped basil
- 4 artichoke hearts, cut in quarters
- 1/4 c. diced tomatoes
- 3 tsp. sherry
- 3 tsp. Chablis
- 1 c. heavy cream
- 1/4 c. grated Romano cheese
- 1 tsp. tomato paste
- salt and pepper to taste
- Saute garlic in oil in a large saute pan until it becomes light gold in color. Add mushrooms and sun dried tomatoes.
- Saute until mushrooms become tender.
- Add diced tomatoes, parsley, basil, sherry and Chablis and cook uncovered until
- liquid is reduced by half.
