Low-Fat Not Fried Rice
- 1/2 c. finely chopped onion
- 1 tsp. liquid Butter Buds or chicken broth
- 2 c. canned fat-free chicken broth
- 1 Tbsp. sherry or cooking sherry
- 1 Tbsp. reduced sodium soy sauce
- 4 drops Tabasco sauce
- 1 c. uncooked long grain rice
- 1/3 c. diagonally sliced green onions
- 1 Tbsp. toasted pine nuts
- Coat medium saucepan with Pam cooking spray.
- Place over medium heat until hot.
- Add onion and saute in liquid Butter Buds or chicken broth for 2 minutes.
- Add 2 cups chicken broth and next 3 ingredients; bring to boil.
- Stir in rice and cover.
- Reduce heat and simmer for 25 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and stir in green onions and pine nuts.
- Makes 6 (1/2 cup) servings.
