Bayou Gumbo
- 3 or 4 boned chicken breasts
- 3 Tbsp. oil
- 1 onion, sliced
- 1 zucchini, sliced
- 1 (10 oz.) pkg. chopped okra
- 1 c. chopped tomatoes
- 1 garlic clove, minced
- 1 (14 oz.) can chicken broth
- 1 c. water
- 1/4 tsp. red pepper
- salt and pepper to taste
- 1 c. cooked rice
- 1 c. Niblets corn, drained
- 1 c. pitted ripe olives
- Dredge chicken in flour (1/3 cup).
- Brown in oil.
- Remove. Add onion, zucchini and garlic and saute until tender.
- Add tomatoes, okra, broth and water along with seasonings.
- Allow to simmer for 20 to 30 minutes.
- Add rice, corn and chicken; simmer over low heat for 10 to 15 minutes.
- When ready to serve, add olives and heat through.
