Bayou Gumbo

  1. Dredge chicken in flour (1/3 cup).
  2. Brown in oil.
  3. Remove. Add onion, zucchini and garlic and saute until tender.
  4. Add tomatoes, okra, broth and water along with seasonings.
  5. Allow to simmer for 20 to 30 minutes.
  6. Add rice, corn and chicken; simmer over low heat for 10 to 15 minutes.
  7. When ready to serve, add olives and heat through.
