Shallots, Green Beans And Cauliflower Salad
- 2 Cups of cauliflower small florets
- 1 lb green beans - trimmed
- 3 tbs extra virgin olive oil
- 1 tsp hot sesame oil
- 4 cloves garlic - chopped
- 2 large shallots - pelled and sliced
- 1/2 tsp smoked Spanish Paprica
- 1 tbs balsamic vinegar
- Bring a large pot of water to a boil. Add the cauliflower and green beans and simmer for about 5 minutes.
- In a medium size skillet heat the olive oil, sesame oil until hot but not steaming. Reduce to low and add the garlic. Cook for 1 minute or until golden brown and fragrant. Remove from heat and add the paprica, shallots and a pinch of salt and pepper. Stir to blend. Drain the vegetables and add to the skillet with oil. Stir to blend. Drizzle with vinegar. Add more salt if necessary. Place in a serving bowel or individual salad bowels.
