Sam'S Sour Rye Bread
- The Sour 3 loaves 4
- 1/2 oz Caraway seed 2T 8t
- 6 oz Rye Flour 2-1/4C 3C
- 1/2 oz yeast 2T dry 3T 4T
- 1/2 C warm Water 5/4C 1.5c
- Basic Dough
- 3/4 C warm Water 1C 1.5C
- 4tsp Salt 6t 8t
- 2tsp oil 1T 4t
- 1 1/2oz yeast 6T dry 9T 12T
- 1 C warm Water 1.5C 2C
- 1-3/4C Rye Flour 2.75C 3.5C
- 3-3/4C Clear(unbleached) Flour
- 5.5C 7.5C
- Wash
- 3/4 oz corn starch 1C boiling water
- Sour
- Mix together and keep in a warm place covered overnight.
- Dough
- Mix the sour w/3/4C warm water add salt and oil.Mix the yeast in 1 C water and add to sour mix. Add the flour and mix. Let it rise !1hour until double.
- Cut into 2x1-1/2 lb pieces,shape and let it rise again until it doubles.Wash the loaves with cornstarch dissolved in boiling water and bake for about 45 minutes in preheated oven
