Island Style Chicken

  1. Drain pineapple chunks, reserving syrup.
  2. In skillet, brown chicken in shortening, pouring off fat.
  3. Add reserved syrup, broth, vinegar, sugar, soy sauce and garlic.
  4. Cover; cook over low heat for 40 minutes.
  5. Add green pepper and pineapple chunks; cook 5 minutes more or until done.
  6. Stir occasionally.
  7. Combine cornstarch and water; gradually stir into sauce.
  8. Cook, stirring, until thickened.
  9. Serve with cooked rice.
