Real Simple Hollindaise Sauce
- 2 Large Egg Yolks
- 2 Tbsp cold water
- 1 Tbsp Fresh lemon juice
- 1 tsp Worschestire Sauce
- Salt and Pepper to taste
- Dash of Cayenne Pepper
- *optional flavor additions
- Fresh chopped chives
- Chipotle (adobo sauce only)
- Fresh Tarragon and Parsley
- 1 stick of unsalted butter
- Whisk together egg yolks, water, lemon juice, worschestire sauce, salt & peppers until thick.
- Melt butter in microwave and leave till somewhat cooled.
- Boil 2" of water in sauce pan and set a heat proof bowl on top as soon as it boils.
- Whisk egg mixture constanly until it becomes thick and creamy. * if it starts to curdle, take off heat and keep whisking. Place back on heat if your consistancy is too thin.
- Let mixture cool to warm room temp. then slowly add melted butter while constantly whisking.
- Your sauce should be thick and creamy.
- To warm sauce, place back on boiling water and constantly whisk till it's up to your liking temp.
