Bread Pudding With Rum Sauce
- 1 pound Day old Challah bread
- 5 eggs
- 1/2 cup sugar
- 1/2 cup brown sugar
- 3 tablespoons dark rum
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 2 cups white chocolate chips
- 1 1/2 cups golden raisins
- 1 batch Rum Sauce
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 quart plus 1 1/3 cup heavy cream
- 3 tablespoons dark rum
- whisk eggs, 1 quart cream, both sugars, rum, vanilla, cinnamon. Stir in cubed Challah, chips and raisins. Set aside for 1 hour. Stir twice.
- Heat oven to 350, place bread mixture in a 13 x 9" baking pan.
- Cover with foil, bake until golden brown, about 30 minutes. Let cool.
- For Rum Sauce - Melt butter, add sugars, whisking constantly until dissolved.
- Add cream, heat to boil. Remove from heat and stir in rum.
- Cut pudding into pieces and top with rum sauce.
