Hominy Casserole
- 1 large onion, chopped fine
- 1 bell pepper, chopped fine
- 1/2 stick margarine
- 3 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. dry mustard
- Tabasco and seasoned salt to taste
- 1 c. grated sharp Cheddar cheese
- 1 can sliced mushrooms, drained
- 1 c. pitted ripe olives, sliced fine
- 1 small can pimentos, sliced fine
- 2 large cans white hominy, drained
- Saute onion and pepper in margarine; when tender, add flour, salt, mustard and Tabasco.
- Gradually add milk and cook until consistency of white sauce.
- Add cheese, seasoned salt, mushrooms, pimentos and olives.
- Rinse hominy in cold water; drain well.
- Mix hominy with sauce and place in lightly buttered casserole.
- Bake at 325u0b0 for 30 minutes or until hot.
- This can be made the day or night before and it can be served hot or cold.
