Nanaimo Bars
- 3/4 cup Butter (divided)
- 1/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 egg, beaten
- 1 tsp vanilla
- 1 3/4 cups graham cracker crumbs
- 1 cup coconut
- 1/4 cup light cream or milk
- 1/2 cup of a 2.9 oz pkg (3 tbsp) instant vanilla custard mix or pudding
- 2 cups sifted powdered sugar
- 6 oz semisweet chocolate, cut up
- 4 tsp butter
- 1. For crust: In medium saucepan, combine 1/2 cup of butter, granulated sugar, cocoa powder, egg and vanilla. Cook and stir until butter is melted and mixture start ot bubble. Remove from heat. Stir in graham cracker crumbs and coconut.
- Press into the bottom of a greased 9X9X2 inch baking pan.
- Set aside.
- 2. For filling: In medium size mixing bowl, beat remaining 1/4 cup of butter until softened. Beat in light cream or milk and custard/pudding mix. Beat in powdered sugar until light in texture. Carefully spread filling over crust. Cover and chill about 1 hour or until firm.
- 3. For topping: In a small saucepan, heat and stir chocolate and 4 tsp butter over low heat unti combined.
- Spread over filling. Cover and chill until firm. Cut into squares. Yield 25 bars.
