Savory Cauliflower Cakes

  1. Boil Cauliflower in salted water for 11 minutes -transfer to a bowl of ice water.
  2. In a bowl wisk together eggs, bacon, scallions, jalapeno, flour, pinch of nutmeg,pinch of salt and pepper
  3. In another large bowl, lightly mash the Cauliflower florets with the back of a fork then whisk in the egg mixture to the cauliflower, fold in the cheese and Bisquick until all combined, season lightly with salt and pepper.
  4. Heat vegetable oil in nonstick skillet. Drop spoonfuls of batter into skillet and cook until golden brown on both sides (about 2 minutes per side). Serve with sour cream and fresh chopped chives as garnish
