Savory Cauliflower Cakes
- 1 small-medium head cauliflower
- 5 slices bacon cooked crisp and then crumbled
- 3 scallions sliced thin
- 1 1/4 cup shredded montery and cheddar cheese
- 1 jalapeno pepper chopped - optional
- 1/3 Cup Bisquick Mix
- 2 tbsp all purpose flower
- 2 large eggs
- Pinch nutmeg
- Salt
- Black Pepper
- 2 tbsp vegetable oil
- sour cream and chopped chives for garnish
- Boil Cauliflower in salted water for 11 minutes -transfer to a bowl of ice water.
- In a bowl wisk together eggs, bacon, scallions, jalapeno, flour, pinch of nutmeg,pinch of salt and pepper
- In another large bowl, lightly mash the Cauliflower florets with the back of a fork then whisk in the egg mixture to the cauliflower, fold in the cheese and Bisquick until all combined, season lightly with salt and pepper.
- Heat vegetable oil in nonstick skillet. Drop spoonfuls of batter into skillet and cook until golden brown on both sides (about 2 minutes per side). Serve with sour cream and fresh chopped chives as garnish
