Cherry Cake

  1. Prepare the cake according to box instructions with the exception of the water. Substitute with the reserved cherry juice. Add in the minced cherries. Bake in two 8 or 9 inch pans, as it makes for a prettier presentation.
  2. For the frosting:
  3. Blend the butter and vanilla in a mixer until fluffy. Alternate the powdered sugar and milk until of adequate spreading consistency. You may not need all the milk, or you may need a little bit more.
  4. Blend in enough food coloring to give a pretty pinkish color.
  5. Stir in minced cherries.
  6. Frost the cake. Garnish with
  7. halved cherries is desired.
  8. Sprigs of greenery, like mint or other herbs are nice as well.
