Juevos Al Tucson
- 2 tsp Dijon mustard
- 2 English Muffins
- 1/3 lb Hot Italian Sausage
- 2 slices fo a medium tomato 1/4" thick
- Kosher salt & freshly cracked pepper
- 6-8 fresh basil leaves
- 1/4 cup minced, fresh parsley
- 1 cup shredded Mozarella cheese
- 2 Tbl Mayo
- Preheat oven to 400 Deg. Spread mustard on bottom of English Muffin & bake 5 min. Cool.
- Half sausage and split lengthwise not cutting completelly through. Saute' in
- small skillet until done. Cool. Place sausge on muffins. Top with tomato slice.
- Sprinkle with S&P. Top with basil leaves. Combine cheese and Mayo & blend well. Spread over tomato slices and bake until bubbly. Serve with fried egg on the side and garnish with basil sprig and chopped fresh parsley.
