Kicked Up Chicken

  1. Pound chicken (in a zip lock bag) until its 1/4" thick, place in baking dish.
  2. Combine brown sugar and next 5 ingredients. Brush mustard mixture on both sides of chicken. Cover & marinate for 1-2 hours in fridge.
  3. Remove chicken - save marinade.
  4. Combine butter & olive oil in large skillet over medium-high heat and saute until chicken is done.
  5. Remove drippings from pan and place chicken on a serving dish. Add marinade to skillet and bring to a boil, pour over chicken.
  6. Serve with rice and green salad.
