Spanish Cheese Limas
- 2 1/2 c. fresh or frozen lima beans
- 1 c. thinly sliced celery
- 1/2 c. finely chopped onion
- 2 Tbsp. oil
- 3 tomatoes, peeled and chopped
- 2 tsp. Worcestershire sauce
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of red pepper
- 1 1/2 c. shredded American cheese
- Cook beans in boiling water in saucepan until tender; drain. Saute celery and onions in oil in large skillet.
- Add tomatoes; reduce heat.
- Simmer, covered, for 10 minutes, stirring frequently.
- Stir in beans, salt, Worcestershire sauce, pepper and red pepper.
- Simmer for 10 minutes.
- Layer 1/2 the bean mixture, half the cheese and remaining bean mixture in lightly greased 2-quart baking dish.
- Bake at 350u0b0
- for 20 minutes.
- Sprinkle with remaining cheese.
- Bake 5 minutes longer or until cheese melts.
