Short Bread Pecan Bars
- Pecan Bars
- 1 c. butter
- 1/2 c.
- 2 c. flour
- 1/2 cup corn starch
- 4 eggs
- 2 cups brown sugar
- 4 T. flour
- 1/2 tsp baking powder
- 2 tsp vanilla
- 1 c. pecans or walnuts
- 7 oz. coconut
- Frosting
- 1 c. butter
- 4 c. powdered sugar
- 8 oz. cream cheese
- 2 T. vanilla
- Pecan Bars
- Pre-heat oven to 250. Cream first four ingredients together (mixture won't really "cream", it will be sort of crumbly until you press it down into the pan). Press on a large cookie sheet (jelly-roll pan) 16x12. Cook for 12-15 minutes. Cook until firm, not brown. Beat the eggs and add remaining ingredients. Mix together and pour on cooked, firm crust. Bake at 300 for 15 minutes, then at 350 for 5 minutes. Let cool
- Frosting
- Mix all ingredients for a couple of minutes until frosting is fluffy. Frost and sprinkle with pecans.
