Seafood Stir-Fry For Two

  1. Whisk together soy sauce, sesame oil, cornstarch and clam juice.
  2. Cut scallops in half.
  3. Slice pepper thin.
  4. Cut peas in half.
  5. Chop tomato.
  6. Heat oil and add shrimp.
  7. Saute 30 seconds. Remove to warm dish.
  8. Add scallops to pan and saute 20 seconds. Remove to dish with shrimp.
  9. Add scallions, pepper, peas and tomatoes.
  10. Return seafood to pan.
  11. Add cornstarch mixture.
  12. Cook and stir until sauce thickens.
  13. Serve over rice.
