Seafood Stir-Fry For Two
- 2 tsp. soy sauce
- 1 tsp. sesame oil
- 2 tsp. cornstarch
- 1/2 c. clam juice
- 1 Tbsp. vegetable oil
- 8 oz. peeled shrimp
- 8 oz. sea scallops
- 1 bunch scallions, sliced
- 1 red or yellow pepper
- 1/2 pkg. frozen snap peas
- 1 tomato, peeled and sliced
- Whisk together soy sauce, sesame oil, cornstarch and clam juice.
- Cut scallops in half.
- Slice pepper thin.
- Cut peas in half.
- Chop tomato.
- Heat oil and add shrimp.
- Saute 30 seconds. Remove to warm dish.
- Add scallops to pan and saute 20 seconds. Remove to dish with shrimp.
- Add scallions, pepper, peas and tomatoes.
- Return seafood to pan.
- Add cornstarch mixture.
- Cook and stir until sauce thickens.
- Serve over rice.
