Mexican Lasagna

  1. In a frying pan cook turkey,add taco seasoning until thoroughly mixed. Heat in a pan the oil and enchilada sauce. In a separate pan heat up refried beans and jalapeno cheese. When the enchilada sauce is hot, dip one by one the corn tortillas and continue with 4 layers of:
  2. 6 tortillas, layer refried bean mixture, layer of meat, layer of shredded mexican cheese, continue until all 4 layers are done. Top off with a layer of shredded cheese and finally sprinkle the black chopped olives on top. Cover with aluminum foil and cook in a preheated oven at 350 degrees for 25 minutes. Compliment with a tablespoon of sour cream.
