Zesty Stir-Fry Rice Noodles
- 2 ounces Rice Noodles
- 1 and a 1/2 cup White Fish, diced
- 1 Carrot, julienned
- 3 Mushrooms, diced
- 1 Whole Spring Onion, chopped
- 1/2 Red Pepper, thinly sliced
- 1/4 cup lime juice
- 1/4 cup rice vinegar
- 1/2 cup Cilantro, chopped
- 3 tablespoon sugar
- 4 teaspoon fish sauce
- 1/2 teaspoon Sambal Olek
- 1 tablespoon sesame oil
- 1/4 cup soy sauce
- Salt and Pepper to taste
- 1. Bring water to a boil in a large pot; cook noodles for 3 minutes. Drain and place noodles back in pot. Cover.
- 2. In a measuring cup or small bowl, mix all your wet indredients and sugar. Stir well.
- 3. Heat a wok or large frying pan to medium temperature, add your carrot, mushrooms, spring onion, and red pepper. Add 2 teaspoons of your wet mixture. Stir-Fry for 2 mins. Add your fish and stir-fry for 2 mins more.
- 4. Add 1/2 of the remaining wet mixture to your vegetables. Cook for 5mins or until fish is cooked and vegetables tender.(Take a fork and test both. Taste a carrot. Break a fish cube in half to make sure its cooked right through).
- 5. Add your vegetables and fish to your noodles in the pot and place pot on low heat. Add the remainder of your wet mix to the pot. Stir ingredients well.
- 6. Take away from heat add the cilantro, leaving a little for garnishing.
- 7. Garnish and serve.
