Zesty Stir-Fry Rice Noodles

  1. 1. Bring water to a boil in a large pot; cook noodles for 3 minutes. Drain and place noodles back in pot. Cover.
  2. 2. In a measuring cup or small bowl, mix all your wet indredients and sugar. Stir well.
  3. 3. Heat a wok or large frying pan to medium temperature, add your carrot, mushrooms, spring onion, and red pepper. Add 2 teaspoons of your wet mixture. Stir-Fry for 2 mins. Add your fish and stir-fry for 2 mins more.
  4. 4. Add 1/2 of the remaining wet mixture to your vegetables. Cook for 5mins or until fish is cooked and vegetables tender.(Take a fork and test both. Taste a carrot. Break a fish cube in half to make sure its cooked right through).
  5. 5. Add your vegetables and fish to your noodles in the pot and place pot on low heat. Add the remainder of your wet mix to the pot. Stir ingredients well.
  6. 6. Take away from heat add the cilantro, leaving a little for garnishing.
  7. 7. Garnish and serve.
