Green Tomato Mincemeat
- 7 1/2 lb. green tomatoes
- 4 lb. apples, peeled and put through grinder or cut in small pieces
- 1 Tbsp. salt
- 4 c. white sugar
- 2 c. brown sugar
- 2 oranges (grated peels and pulp)
- 1 lemon (grated peels and pulp)
- 1 1/2 pkg. raisins (1 seeded and 1/2 seedless)
- 1/4 c. vinegar
- 1 large can crushed pineapple (add last)
- 1 Tbsp. cinnamon
- 1/2 Tbsp. cloves
- Cut tomatoes in small pieces or grind (I put them through food chopper).
- Bring to a boil in cold water 3 times, draining off water each time.
- Add all other ingredients, except pineapple. Cook slowly about 3 hours or until done.
- Add pineapple last 5 minutes.
- Put into hot sterile jars and seal.
- May process in hot water bath for 20 minutes.
