Stuffed Peppers

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cook the dirty rice as directed. Meanwhile, brown and drain sausage. Add the sausage to the dirty rice and mix well.
  3. Cut the tops of the Green Bell Peppers, then remove the seeds and ribs inside. Cut the rounded ends of the peppers so that they can stand without wobbling. Place the peppers in boiling water for 5 minutes (or until tender, but not limp) and then put them in an ice bath. The ice bath will allow the peppers to keep their color.
  4. Spoon dirty rice mixture into the peppers, but leave a little room at the top. Place peppers in baking dish. Top peppers with pasta sauce then put in oven for 15-20 minutes.
  5. Remove peppers from the oven and add the shredded cheese. Then, bake the peppers with shredded cheese on top for another 5 minutes.
  6. Take the peppers out of the oven and let them cool.
  7. *There's probably going to be some of the dirty rice mixture left over. You can eat it or make more peppers if you want!*
