Lime Bbq Chicken With Peach Salsa
- Chicken preparation:
- 8 Chicken breasts - Skin on
- 2 teaspoons - seasoning salt (I like Lawry's seasoning salt)
- 2 teaspoons - Black pepper
- 1/2 teaspoon - cayenne pepper
- 1-1/2 cups lime juice (fresh is best if available)
- 1 - cup Olive Oil
- 8 cloves garlic - chopped fine
- 1 cup - cilantro chopped
- Peach Salsa:
- 4 cups of fresh peaches - cut into bite size pieces
- 1 cup chopped purple onion - chopped fine
- 1/2 cup chopped red bell pepper diced in small pieces
- 2 - fresh jalapeno - seeded and finely chopped
- 1- garlic clove - chopped fine
- 1/3 cup - cilantro - chopped
- 1 - teaspoon black pepper
- 1/2 - teaspoon salt
- 1 - tablespoon Olive oil
- To prepare chicken:
- Wash chicken and pierce all pieces with a fork. Set aside. Mix first 4 ingredients in a bowl. Rub mix all over chicken parts and stick in a Ziplock Bag. Mix remaining ingredients in a bowl and pour inside Ziplock bag. Marinate in refrigerator for at least 4 hours. Chicken should be grilled on BBQ on a slow fire and cook each side about 15 to 20 minutes until chicken is no longer pink inside. Serve with Peach salsa.
- Peach Salsa:In a bowl, mix all peach salsa ingredients. Set aside and serve with lime chicken.
