Apple And Cabbage Slaw
- 2 cups fresh white cabbage, thinly sliced
- 1/2 cup apples, cored and thinly sliced (use a tart eating apple)
- 1/2 cup carrots, shredded *
- 1/8 cup thinly sliced red onions
- 1/2 cup bok choy or swiss chard, sliced thinly
- Sarah's creamy dressing
- 1 cup mayonnaise
- 2 Tablespoons honey
- 1 Tablespoon and a splash of red wine vinegar
- 1/2 tsp Dijon mustard
- 1.tdd all the vegetables to a large bowl and add season with salt and fresh ground pepper and toss to combine.
- 2.tlace the dressing ingredients in a small bowl and whisk to combine. The dressing will be slightly thick. Add the dressing to the vegetables and toss to combine. Taste and add additional salt and pepper if desired. Mix the slaw with the dressing right before serving
