Chicken And Noodles
- 1 whole chicken-about 4 lbs.
- a couple of onions, quartered
- some carrots
- celery
- bay leaf
- Raemes Frozen Noodles
- salt and pepper to taste
- chopped onion
- chopped celery
- Put chicken in stock pot.
- Place quartered onions, carrots, celery and bay leaf on top.
- Cover chicken with water.
- Bring to boil and simmer for 45 minutes to an hour.
- Remove chicken from pot.
- Let cool.
- Strain broth from vegetables. take meat from bone. Set aside. put broth back into stock pot.
- Bring to boil. place noodles in broth.
- Boil for 20 minutes.
- Add chopped onion and celery during last 5 minutes.
- Place chicken back into broth.
- Heat through.
- If it needs to be thickened, add some cornstarch mixed with water.
- Serve over mashed potatoes.
- This is a family favorite.
