Pav Bhaji
- 4 large potatoes, peeled and chopped in large pieces
- 1 small cauliflower, chopped in large pieces
- 6 oz frozen peas
- 1/2 Large Eggplant, peeled
- 2-3 med-large white onions, chopped finely
- 8-10 roma tomatoes, chopped finely
- 10-12 garlic cloves, chopped finely
- 1 green pepper, chopped finely
- 1 red pepper, chopped finely
- 5-6 tsp Pav Bhaji Masala
- 1 tsp Red Cayenne Pepper powder
- Salt to taste
- 1 tomato sauce can
- 1 tbls of unsalted butter
- 1 red onion, chopped finely
- 1 bunch cilantro, chopped finely
- 1. Put all veggies in pressure cooker and add 1 cup water. 4 whistles to complete.
- 2. Mash all veggies in cooker.
- 3. Saute onions for a few mins, then add garlic, bell peppers, and tomatoes. Cook for 2-3 mins
- 4. Mix the veggies that are in the pressure cooker into onion mixture. Cook for 2-3 mins
- 5. Add Pav Bhaji Masala, Red Mirchi, and Salt. Mix and cook well for 10 mins
- 6. Add 1 can of tomato sauce. Add more to taste if needed. Add butter and cook for an additional 2-3 mins.
- 7. Garnish with cilantro and red onions
