Billy Joel Tuna/Cucumber Salad
- Billy Joels Grilled Tuna and Cucumber Salad

- Need to refrigerate / marinade 2 bowls of ingredients for 1 hour or overnight.
- Ingredients
- 1/4 cup Teriyaki sauce
- 1/4 cup Lemon juice
- 1 tablespoon Chopped fresh parsley leaves
- 2/3 cup + 1 teaspoon olive oil
- Salt and pepper
- 2 Fresh tuna steaks, 8 oz each
- 2 Medium cucumbers peeled, thinly sliced
- 1/4 cup White wine vinegar
- 1 tablespoon Chopped fresh cilantro leaves
- 1/2 Small onion, thinly sliced (optional)
- 1. In shallow dish (like pie plate), combine teriyaki sauce, lemon juice, parsley, 2/3 cup olive oil, 1/4 teaspoon black pepper. Add tuna making sure fish is completely covered by marinade. Cover, refrigerate at least 1 hour or overnight.
- 2. In a 2nd bowl, combine cucumber, vinegar, cilantro, 1 tsp oil, 1/4 tsp each of salt and pepper, and onion. Cover and refrigerate at least 1 hour or overnight.
- 3. Remove tuna from marinade, and discard marinade. Preheat grill. Cook tuna 4-6 minutes on both sides turning once, but still pink in center.
- 4. Drain cucumber salad. Break tuna into chunks and add to salad.
