Billy Joel Tuna/Cucumber Salad

  1. 1. In shallow dish (like pie plate), combine teriyaki sauce, lemon juice, parsley, 2/3 cup olive oil, 1/4 teaspoon black pepper. Add tuna making sure fish is completely covered by marinade. Cover, refrigerate at least 1 hour or overnight.
  2. 2. In a 2nd bowl, combine cucumber, vinegar, cilantro, 1 tsp oil, 1/4 tsp each of salt and pepper, and onion. Cover and refrigerate at least 1 hour or overnight.
  3. 3. Remove tuna from marinade, and discard marinade. Preheat grill. Cook tuna 4-6 minutes on both sides turning once, but still pink in center.
  4. 4. Drain cucumber salad. Break tuna into chunks and add to salad.
