Margarita Shrimp
- 3 Dozen Med to Large Raw Shrimp
- 4 Cloves Fresh Garlic
- 1 Bunch Fresh Cilantro
- 1 Can Chipotle Peppers in Adobe Sauce
- 24 Ounces of 'plain' margarita mix (don't use flavored such as strawberry or those with alcohol already in the mix)
- Wood or Metal Skewers
- In a blender or food processor, combine garlic, cilantro, chipotle's and 6 oz of maragita; blend until garlic, chiles and cilantro are at least coursely chopped. Add remaining margarita mix. Reserve 6 oz of the mixture for basting and pour the remaining mixture over shrimp; marinate refrigerated for no longer than 30 minutes. (acids will cook shrimp if left in marinade longer); remove shrimp from marinade and place on skewers; grill for two to three minutes on each side, basting frequently with reserved marinade.
