Bon Bon Chicken
- 2 lbs boneless, skinless chicken breast
- 2 bunches green onions, chopped
- 1 TBS ginger, minced
- 1 TBS garlic, minced
- 1/2 TBS red pepper oil
- 1/2 TBS salt
- 4 TBS sesame seed paste, Asian dark*
- 4 TBS soy sauce
- 1-1/2 TBS brown vinegar*
- 4 TBS brown sugar
- 2 TBS sesame oil

- Trim and cook chicken breasts. Chicken may be boiled to retain moisture. This will take approximately 20 minutes. When just warm, shred chicken into small pieces. If you have a Kitchen Aid mixer you can shred it in minutes with the paddle attachment. Keep an eye on it because it shreds quickly.
- Mix all the other ingredients together except for the green onions. Taste for salt. Pour the sauce over the chicken and combine with the green onions. This can be served cold or at room temperature. Sesame seeds can be added as a garnish. Also, try it with lettuce leaves as lettuce wraps.
