Chicken-Broccoli Casserole
- 3 c. cooked broccoli cuts
- 12 oz. chicken (cooked, cut into chunks)
- 1/2 tsp. lemon juice
- 6 Tbsp. lite mayonnaise
- 2 chicken bouillon cubes
- 2 c. skim milk (or 1/2%)
- 2 1/2 Tbsp. flour
- 1/2 tsp. curry powder
- 6 oz. grated low-fat cheddar cheese
- 2 slices bread (crumbled)
- 1 Tbsp. diet margarine
- Layer broccoli in a 13 x 9-inch baking dish.
- Layer chicken on top of broccoli.
- Mix lemon juice, mayonnaise, bouillon cubes, skim milk, flour and curry powder in a saucepan.
- Cook over medium-high heat until it thickens.
- Pour this sauce over the broccoli and chicken.
- Next, add a layer of cheese.
- Melt the butter and pour it over the bread crumbs.
- Put this on top as the last layer.
- Bake at 350 degrees for 30 minutes.
