Garden Stir-Fry Vegetables
- 2 teaspoons canola oil
- 1 clove garlic, minced
- 1 cup fresh broccoli, chopped
- 1 cup fresh baby spinach, chopped
- 6 medium carrots, cleaned and sliced into 1/4-inch pieces
- 1 medium green pepper, chopped
- 3 medium stalks celery, chopped
- 1 medium onion, chopped
- 2 cups cabbage, shredded
- 1 Tablespoons light soy sauce, if desired
- 1/2 cup of water, or so, to aid in cooking
- 1) Heat oil in large frying pan over medium heat.
- 2) Add garlic and cook for about 2 minutes.
- 3) Stir in next 8 ingredients.
- 4) Add 2 Tablespoons water. Cover and cook 10-15 minutes, until tender, stirring occasionally.
- 5) Add small amounts of water, as needed, throughout the cooking period to avoid burning vegetables.
- 6) Add soy sauce, a few minutes before serving, if desired
