Smoked Turkey And Watercress Sandwiches With Curried Apricot Mayonnaise

  1. Preheat oven to 350 F.
  2. Place pita bread on baking sheet and heat in oven until just warm, about 5 minutes.
  3. Cut rounds in half, forming pockets.
  4. Place in napkin lined basket and keep warm.
  5. Arrange turkey, watercress and tomatoes on platter.
  6. Place walnuts and mayonnaise in bowls.
  7. Allow diners to assemble their own sandwiches.
  8. For Curried Apricot Mayonnaise:
  9. 1 1/2 cups mayonnaise
  10. 1/4 cup apricot jam
  11. 1/2 tablespoon curry powder
  12. Whisk ingredients in medium bowl to blend well.
