Smoked Turkey And Watercress Sandwiches With Curried Apricot Mayonnaise
- 8 pita bread rounds
- 1 1/2 pounds sliced smoked turkey
- 2 watercress bunches, trimmed
- 8 plum tomatoes, sliced
- 1 cup walnuts, chopped
- Curried Apricot Mayonnaise
- Preheat oven to 350 F.
- Place pita bread on baking sheet and heat in oven until just warm, about 5 minutes.
- Cut rounds in half, forming pockets.
- Place in napkin lined basket and keep warm.
- Arrange turkey, watercress and tomatoes on platter.
- Place walnuts and mayonnaise in bowls.
- Allow diners to assemble their own sandwiches.
- For Curried Apricot Mayonnaise:
- 1 1/2 cups mayonnaise
- 1/4 cup apricot jam
- 1/2 tablespoon curry powder
- Whisk ingredients in medium bowl to blend well.
