Pumpkin Chocolate Chip Muffins
- 1 cup sugar
- 1 cup smart balance spread
- 4 eggs (or Eggbeaters)
- 1 15-ounce can pumpkin puree
- 3 cups whole wheat flour
- 1/3 cup flax seed meal
- 1 tablespoon cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 2 teaspoons baking powder
- 1 cup chocolate chips
- Cream together sugar and smart balance until smooth and creamy. In a separate bowl, mix together eggs and pumpkin puree. Add to above mixture and mix well.
- In a separate bowl, mix remaining dry ingredients, except for chocolate chips. While stirring, slowly add dry mixture to wet mixture. Stir in chocolate chips.
- Fill two greased muffin pans with batter; each muffin should be 1/2 to 3/4 of the way filled. Bake at 350 degrees for 20-25 minutes. Do not overbake.
