Pumpkin Chocolate Chip Muffins

  1. Cream together sugar and smart balance until smooth and creamy. In a separate bowl, mix together eggs and pumpkin puree. Add to above mixture and mix well.
  2. In a separate bowl, mix remaining dry ingredients, except for chocolate chips. While stirring, slowly add dry mixture to wet mixture. Stir in chocolate chips.
  3. Fill two greased muffin pans with batter; each muffin should be 1/2 to 3/4 of the way filled. Bake at 350 degrees for 20-25 minutes. Do not overbake.
