Chicken Souvlaki With Cilantro
- 6 chicken breasts, cubed
- 8 warmed pita breads
- Marinade:
- Small bunch of mint, chopped
- 3 garlic cloves, finely chopped
- 1 red chili, finely chopped
- Juice and grated zest of 1 lemon
- 1 tablespoon corinader seeds, crushed
- 1 teaspoon turmeric
- 1 cup plain yogurt
- 1/4 cup olive oil
- salt and pepper
- Dressing:
- large bunch of fresh cilantro
- 1 cup plain yogurt
- juice and zest of 1 lemon
- 2 tablespoon olive oil
- 1) Mix all marinate ingredients in bowl together
- 2) Add chicken cubes to marinade and smother. Marinate at least overnight and up to 3 days
- 3) Grill chicken - about 6 minutes per side on skewers. Rest for 5 minutes
- 4) Put all dressing ingredients into food processor and make smooth green sauce.
- Pour sauce over chicken in pitas. Serve with extra cilantro.
