Bacon Wrapped Stuffed Chicken Breast
- 2 Large boneless chicken breast
- 8 strips of bacon
- 1 cup chopped spinach
- 1/2 cup grated parmesian cheese
- salt
- pepper
- garlic powder
- slice chicken breast lengthwise (butterfly)
- in a seperate bowl combine finely chopped spinach, cheese, salt, pepper, and garlic powder.
- add 1/2 mixture to each breast and roll breast around mixture.
- take 2 sheets of aluminum foil and rub with olive or veg oil
- lay 4 strips of bacon on each oiled sheet and lightly season with salt and pepper
- roll chicken breast on bacon so bacon is wrapped around the breast
- seal TIGHTLY in the aluminum foil
- submerge in pot of boiling water for 20-25 mins
- take out and let sit for 5-10 mins
- refrigerate for 20-25 mins
- remove from refrigerator and carefully remove alum foil.
- pan fry on med heat until bacon is crispy.
- serve
