Peppermint Pinwheels
- 1 c. or 2 sticks soft butter
- 1 c. packed brown sugar
- 1/2 tsp. baking soda
- 1 tsp. vanilla extract
- 1 tsp. salt
- 2 eggs
- 1/2 tsp. red or green food coloring
- 1 tsp. peppermint extract
- 3 c. flour
- In a large mixing bowl, combine all ingredients except food coloring.
- Divide the dough evenly into halves; add food coloring to one half of dough, refrigerate for one hour.
- Take the plain dough and roll on a lightly floured surface into a 16 by 9 inch rectangle.to the same with the color dough; then lay it over the plain dough.
- Roll them and wrap tightly in wax paper. Refrigerate at least 4 hours.
- When finished heat oven to 400u0b0; slice about 1/4 inch thick and place on ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
