Lb'S Spinach Quiche
- 1/2 cup plain yogurt
- 1/2 cup milk
- 5 eggs, lightly beaten
- 1/2 clove minced garlic
- 1 cup of fresh sliced mushrooms
- 4 oz. shredded reduced-fat Cheddar cheese
- 4 oz. Feta cheese
- 1 cup Fresh spinach
- 1/4 cup chopped onion
- 9 inch unbaked pie shell
- Salt to taste
- Preheat oven to 400 degrees. Line a cookie sheet with foil.
- In a large bowl, whisk together yogurt and milk until smooth. Then whisk in eggs.
- Mix garlic, mushrooms, cheese, spinach & onion and layer in pie shell. Then pour in egg mixture.
- Place quiche on prepared cookie sheet. Cover quiche with foil. Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.
