Rocky Road Brownies

  1. Preheat oven to 350 degrees. Line a 9 x 13 in. pan with foil using two sheets folded to fit bottom of pan. (one piece will be 9 x 20 the other will be 13 x 16 approximately)
  2. First layer: Place butter and chocolate in a small pan and cook over the lowest heat until melted. Off heat add sugar, eggs, vanilla, flour, baking powder, and nuts. Mix well. Pour into prepared pan.
  3. Second layer: Beat cream cheese and sugar in mixer using paddle blade. When incorporated add flour, butter, eggs, and vanilla until smooth and fluffy. Scrape down sides of bowl, add nuts and mix briefly until just combined. Spread over first layer in pan. Sprinkle with chocolate chips. Bake for 20 - 25 minutes until edges are just beginning to brown. DO NOT over bake. While they are baking make frosting.
  4. As soon as you remove pan from oven sprinkle marshmallows on top in even layer. Return to oven for approx. 3 minutes until they are melted but not browned.
  5. To make frosting:
  6. Place butter and chocolate in pan on low heat until melted. Add cream cheese and milk mix until smooth. Add confectioners sugar and mix with hand mixer until smooth, add vanilla. Immediately four over marshmallows. Cool in pan completely before cutting.
