Utterly Awesome , Low Fat Southwestern Pork Stew
- 1# Lean Pork for Stew
- 1 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/8 tsp cayenne
- 2 tsp vegetable oil
- 1 1/3 C coarsley chopped yellow onion
- 1 C green bell pepper chopped
- 2 cloves garlic minced
- 3 C peeled and cubed potatoes
- 1 C V-8 Vegetable juice (no salt)
- 1/2 C water
- 1 - 14 oz Mexican style stewed tomatoes
- 1 - 10 oz package frozen corn, thawed and drained.
- Cilantro
- Sour cream (optional)
- Trim meat and cut into cubes
- Combinecumin, salt, cinnamon, cayenne in a brown paper bag and toss meat in until coated.
- Heat medium size stock pot and add oil. Add spiced meat and cood for 5 minutes. Add onion, pepper, garlic and saute for 3 minutes. Stir in potatoes, v-8, water and tomatoes. Bring to a boil, cover, reduce heat and cook for 25 minutes, simmering. Stir in corn. Simmer for 30 minutes more.
- Chop Cilantro and sprinkle on as you serve. A dollop of sour cream is a nice option for those who like it
