Walnut Pumpkin Bread
- 4 Eggs
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 1 teaspoon Vanilla
- 1 can pumpkin (15 oz.)
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons Baking Soda
- 1 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 1 cup chopped walnuts
- Icing for cake:
- 1 stick Butter
- 8 oz. bar cream cheese
- 1 box powder sugar
- 1 teaspoon vanilla
- Chopped walnuts (if not added to cake batter)
- Mix above and ice cooled cake.
- Beat eggs,sugar,oil,pumpkin and vanilla together.
- Mix dry ingredients and walnuts then stir into wet ingredients.
- Pour into two large loaf pans or divide evenly into smaller loaf pans filling 3/4 full.
- Bake at 350 degrees for 1 hour or less if using smaller pans or making cupcakes.
