Mushroom And Artichoke Risoto
- 12oz sliced mushrooms
- 12oz jar maranated Artichokes drained and rinsed
- 1/2 sweet onion chopped
- 1/2 bunch scallions chopped
- 12oz arborio rice
- 1/2 cup grated parmesan cheese
- 32oz container chicken stock plus 2 cups water
- 1/2 stick salted butter
- 1/2 teaspoon salt and 1 teaspoon pepper
- 1. Bring chicken stock to a boil in separate pot then reduce to simmer.
- 2. Saute mushrooms, onion, salt and pepper in butter
- on medium heat for 7-10 minutes.
- 3. Add rice and saute for 3 more minutes then raise heat to medium-high.
- 4. Begin adding the hot stock one/two cup at a time making
- sure the rice is always just covered.
- 5. When rice is almost done add the artichokes and scallions.
- 6. Add the cheese at the end. Toss and serve. enjoy.
