Perfect Pineapple Mojitos
- 4 glasses, with enough ice for each
- Cruzan Estate Rum*
- 4 fresh pineapple slices**
- Fresh mint (roughly 12-18 leaves)
- Simple Syrup (optional)***
- Ginger Ale
- 1 lime, quartered
- One shaker/tin
- *This is ideal (and cheap/tasty) but you can use your favorite, instead. Navy/Black Strap/heavily spiced rum are, however, not recommended.
- **Fresh is preferable, but canned will work in a pinch. Also, if you can't find slices, chunks work fine as well.
- ***if you don't have it around, a sugar cube or little bit of stevia works great. You could also use Agave Nectar or honey
- Place a few leaves of mint and a slice of pineapple in the bottom of each glass, topped with your simple syrup or substitute (if you've chosen to use it). Muddle a few times, or until the consistency looks appealing to your senses (you won't be straining it out).
- Top each glass with ice. Pour 1.5 oz of rum into each, (you could also choose now to add .5 oz of triple sec if you'd like, but it tastes great without) finishing off with ginger ale. Dump the entire glass into the shaker, and promptly pour it back to the glass. This gently mixes it. Serve with a lime wedge (and a slice of pineapple if you want an extra flare to your presentation).
- For best results, find a deck and sunshine to post up and consume your beverage.
