Rice With Chicken
- 2 1/2 lb. chicken, cut in pieces
- 2 cloves garlic, minced or crushed
- 1/2 tsp. pepper
- 1/2 tsp. oregano
- 1 Tbsp. salt
- 1/4 lb. ham, cut in small pieces
- 2 oz. bacon, cut in small pieces
- 2 fresh tomatoes, cut in pieces
- 1 green pepper, cut in pieces
- 1 onion, cut in pieces
- 1/2 c. oil and achote
- 1 Tbsp. capers
- 1/2 c. cut up olives
- 1 1/2 c. rice
- 3 c. boiling hot water
- 4 pimentos for topping
- 1 c. green peas for decoration
- Season the chicken with the ingredients (pepper, salt, oregano and garlic).
- Stir-fry the ham and bacon.
- Then put in all the other ingredients, plus the chicken.
- Stir-fry for 1/2 hour.
- Add rice (uncooked) to chicken, mix it with stir-fry chicken and all other ingredients, then add the hot water (3 cups).
- Keep at a boiling consistency and cover.
- Once the water dried out, turn the rice over, lower flame and keep cooking until the rice is completely soft.
