Crock Pot Ribs
- THE NIGHT BEFORE:
- 4lbs pork baby back ribs (go high quality and lean)
- salt & pepper to taste
- light sprinkling of cayenne pepper
- THE DAY OF:
- 1 large crock pot
- 2 bottles of your favorite BBQ sauce (adjust with vinegar if too sweet)
- 1 cup ketchup
- THE NIGHT BEFORE:
- Preheat oven to 400 F and lay the ribs (uncut) in a shallow baking pan.
- Season with the salt, pepper and cayenne.
- Brown about 15 minutes, then turn the ribs over and brown the other side for another 15 mins.
- Drain the fat off and cut into pairs.
- THE DAY OF:
- In med bowl, mix together 1.5 bottles of BBQ sauce, ketchup and adjust with vinegar if too sweet. Also adjust now for the level of spiciness you prefer.
- Save the other 1/2 bottle for coating the ribs after they've cooked in the crock pot.
- Place ribs in crock pot and pour the blended BBQ sauce mix over the ribs.
- Cook the ribs over low heat 6-8 hours or until ribs are tender.
- RIGHT BEFORE SERVING:
- Place ribs on clean baking pan lined with foil and coat with the remaining half bottle of BBQ sauce.
- Broil the ribs under the broiler till carmelized. (Keep an eye on them and turn them over and carmelize the other side, too.)
- Serve.
