Spinach & Onion Frittata
- 1 large yellow onion, finely chopped
- 1 tablespoon olive oil
- ~ 10 ounces fresh spinach
- 1/4 cup minced parsley
- 1/2 tsp basil
- salt & pepper
- 6 eggs
- 1/4 cup light sour cream
- 1 cup shredded extra-sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- Preheat the over to 350u0b0 Fahrenheit. Coat a 9x9 inch square baking pan lightly in oil.
- In a large skillet, saute the onions in the oil until translucent. Stir in the spinach and remove from heat. Add the parsley and basil, as well as salt and pepper to taste.
- In a large bowl, beat the eggs until well blended, then mix in the sour cream and cheddar cheese. Add the onion/spinach mixture and stir together until evenly blended.
- Pour into the 9x9 inch oiled pan and sprinkle with the Parmesan cheese. Bake for about 25 minutes, or until the eggs are set.
