Greek Shrimp
- 1 lb. medium Shrimp (peeled and deveined
- 1 28oz can crushed tomatoes
- 1 Large Zucchini
- 3 cloves of garlic
- 1 small onion
- 1 TBS dried oregano
- 1 Tsp Red pepper flakes (optional)
- 1 Package Crumbled Feta Cheese
- 1 Package Angel Hair Pasta
- Mince garlic and dice onion. Combine the onions and garlic with tomatoes, oregano, and pepper flakes in a shallow baking dish.
- Place baking dish in a preheated 350 degree for approximately 30 minutes or until the onions are tender.
- While the tomatoes are cooking julien the zucchini and add to the tomato mixture about 20 minutes into the cooking process.
- Once the onions are tender, add the shrimp and feta cheese. Bake for an additional 5 to 10 minutes or until the shrimp is cooked through.
- Cook pasta as directed, drain, and serve the shrimp and tomatoes over the pasta.
