Spicy Vegetarian Black Beans (Fusion)
- 2 Onions, finely chopped
- 3 tomatoes, finely chopped
- 1 bell pepper, finely chopped
- 3 tbsp cilantro, fresh and finely chopped
- 1 serrano pepper, finely chopped
- 4 cloves of garlic, crushed
- 2 tbsp green onions, finely chopped
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- 10 oz tomato sauce
- 2 15.5 oz cans of black beans
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 tsp brown sugar
- 4 tbsp lime juice
- Saute the onions in oil over medium heat until they begin to brown.
- Add the turmeric, cayenne pepper, serrano pepper, garlic, cumin, and bell pepper and saute for another minute, stirring, over medium high heat.
- Add the tomatoes and green onion and stir.
- Add the tomato sauce, beans, lime juice, salt, and sugar, and simmer over low heat for half an hour.
- Add the cilantro.
- Serve over Basmati rice.
