Salmon Loaf
- 2 tablespoons butter
- 1 small onion, minced
- 1 celery stalk, minced
- 3/4 teaspoon curry powder
- 1/2 cup heavy cream
- 2 egg, lightly beaten
- 6 Tablespoons bread crumbs, fresh
- 2 tablespoons fresh parsley, minced
- 2 tablespoons fresh tarragon, minced
- 2 tablespoons fresh chives, snipped
- 3/4 teaspoon salt
- 1 1/2 pounds salmon fillet, cooked
- 1.taute onion and celery in butter until soft; about 10 minutes. Add curry powder and cook one minute more. Scrape into large bowl.
- 2.tdd remaining ingredients and mix gently until well combined. Refrigerate the mixture for 15 minutes.
- 3.treheat oven to 375.
- 4.thape the fixh mixture into a loaf about 8 inches long by 4 inches wide on a nonstick, heavy baking sheet. Bake until a knife inserted in the center of the loaf for 20 seconds is hot to the touch, about 45 to 40 minutes. Let cool slightly, cut iinto thick slices with a serrated knife and serve.
