Peach Crepes With Turkey Suasage
- Sauteed Peaches
- 1/2 peach (sliced with skin removed)
- 1/2 teaspoon brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon butter
- 1 pinch nutmeg
- Sweetened Sour Cream
- 2 oz low fat sour cream
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 1/8 tablespoon brown sugar
- 2 frozen crepes
- 1 link low fat sausage
- Melt butter in saute pan, add brown sugar and let bubble. Add peaches and continue to move until soft, then add vanilla extract and nutmeg and mix well. Set aside. Mix all ingredients for the sweetened sour cream together well. Lay crepe flat and spread sour cream mixture down the center. Put sliced peaches on top and roll crepe. Bake in oven until golden brown. Serve with one link of your favorite low fat turkey sausage.
