Clam Munchies
- 4 cans chopped clams drained very well.
- 2 large eggs
- 1/4 c. club soda
- 1 tsp. salt
- 1 tsp. grated horseradish
- 1 1/2 c. flour
- 1/4 c. corn starch
- 1 tsp. baking powder
- 1/4 c. milk
- 1/2 tsp. dried dill weed
- 1/2 tsp. pepper
- 1 tsp. lemon zest
- oil for frying. I use lard or peanut oil.
- Drain the clams very well and put in dish. Mix all ingredients except club soda in another bowl and mix very well. Gently stir in the clams. Heat the oil to 350 degrees. Just before frying the clams, add in the club soda. Drop a tablespoon full of batter into the oil. Be careful! Fry until golden on all sides and then drain on doubled paper bags. Keep warm in the oven. Make a good homemade tartar sauce or cocotail sauce to dip in. I have also used these on top of green salads and they are so good!
