White Chocolate Macadamia Nut Cookies
- 1 C MARGARINE
- 1-1/2 C Granulated sugar
- 1/2 C Light brown sugar
- 2 large eggs
- 3-1/4 C Flour
- 1 Tsp. Baking soda
- 1 Tsp. salt
- 12 oz. white chocolate chopped coarsely
- 6 oz. whole & pieces of macadamian nuts
- 3/4 C sweetened flaked coconut
- 2 Tsp. Vanilla extact
- 1. Place margarine in large mixing bowl and cream with both sugars.
- 2. Add eggs and vanilla. Beat well
- 3. Mix flour, baking soda and salt. Add to creamed mixture
- 4. Add white chocolate, coconut and macadama nuts. Chill dough for 2 hours covered with plastic wrap.
- 5. Drop by rounded tablespoonfuls onto ungreased sheets. Flatten slightly.
- 6. Bake at 325 F. for 10-12 minutes
